How is it that we cannot call a u.s. native american "anglo" but we can call a indigenous mexican "latin"?

so anglosaxons are white people only but latins are not right? i thought real latin people were spaniards, italians, portuguese, french, romanians, etc. not indigenous mexicans or south americans? just like real anglo people are germans, english, swedish, irish, etc. not black people from Jamaica
